Ingredients:
- 1 1/2 cups pecans, chopped
- 1 cup pitted dates, soaked in hot water for 10 minutes and drained
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 prepared vegan pie crust
- 1/4 cup dairy-free chocolate chips optional
Instructions:
Preheat your oven to 350F 175C
In a food processor, combine the soaked dates, almond butter, maple syrup, melted coconut oil, vanilla extract, and salt
Blend until you have a smooth and creamy filling
Fold in 1 cup of chopped pecans into the date mixture
Pour the pecan mixture into the prepared vegan pie crust and spread it evenly
Sprinkle the remaining 1/2 cup of chopped pecans on top of the pie
If desired, sprinkle dairy-free chocolate chips evenly over the pecans
Bake in the preheated oven for 25-30 minutes, or until the pie is set and slightly golden on top
Remove the pie from the oven and let it cool completely before serving
It will firm up as it cools
