Lemon Butter Tarts



These Lemon Butter Tarts are a delightful combination of tangy lemon filling and buttery pastry crust. They make for a perfect treat any time of day, whether served as a dessert or a sweet snack.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions:

Preheat oven to 375F 190C

In a food processor, pulse together flour, 1/4 cup sugar, and salt

Add diced butter and pulse until mixture resembles coarse crumbs

Gradually add cold water, pulsing until dough comes together

Wrap dough in plastic wrap and chill for 30 minutes

Roll out dough on a floured surface and cut into rounds to fit tart molds

Press dough into molds

In a mixing bowl, whisk together eggs, 3/4 cup sugar, melted butter, lemon juice, lemon zest, and vanilla extract until well combined

Pour lemon mixture into tart shells, filling each about 3/4 full

Bake tarts in preheated oven for 20-25 minutes, or until filling is set and crust is golden brown

Allow tarts to cool before serving

Optionally, dust with powdered sugar before serving
