Stuffed Pepper Soup



This soup tastes like stuffed peppers but comes in a bowl. It is hearty and full of flavor. It's perfect for a warm meal on a cold day.

Ingredients:

  • 1 lb ground beef
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 can 14 oz diced tomatoes
  • 1 can 8 oz tomato sauce
  • 4 cups beef broth
  • 1 cup cooked rice
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup shredded cheese for garnish
  • Fresh parsley for garnish

Instructions:

In a large pot, brown the ground beef over medium heat

Add onions and garlic, cook until onions are translucent

Stir in the diced green and red bell peppers

Pour in diced tomatoes, tomato sauce, and beef broth

Mix well

Add oregano, basil, black pepper, and salt

Bring to a simmer

Reduce heat and let it simmer for 20 minutes

Stir in cooked rice and simmer for an additional 5 minutes

Adjust seasoning if needed

Serve hot, garnished with shredded cheese and fresh parsley
