Vegan Lentil Soup



This vegan lentil soup is hearty and healthy, and it's full of protein and fiber. Great for a warm meal on a cold day.

Ingredients:

  • 1 cup dry green lentils
  • 1 onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can 14
  • 5 oz diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach

Instructions:

Run cold water over the lentils and drain them

Lentils, onion, carrots, celery, garlic, diced tomatoes, vegetable broth, thyme, oregano, cumin, salt, and pepper should all be put in a crockpot

Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the vegetables and lentils are soft

At the end of the cooking time, add chopped spinach or kale

Check the seasoning and make changes if needed

Enjoy while hot!
